Yields: 15 biscuits
The familiar comfy spices and plump raisins make them even more irresistible. They will keep for at least one week if stored in an airtight container in the fridge --if they last that long!
1 cup (100g) instant oats (fermented if required and measured like that )
3/4 cup (90g) whole wheat or fermented * flour (quantified like that )
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup (120mL) pure maple syrup
1/4 cup (40g) raisins
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. In a separate bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Stir in the maple syrup. Add in the flour mixture, stirring just until incorporated. Fold in the raisins.
Preheat the oven to 325°F, along with a baking sheet with a silicone baking mat or parchment paper.
Using a spoon their website and spatula, dip the cookie dough into 15 curved scoops onto the prepared sheet, and flatten to the desired depth and width using Healthy Oatmeal Cookies - Martha Stewart a spatula. Bake at 325°F for about 10-12 minutes.
Notes: It's extremely important to measure both the wheat and oats properly using this technique or a kitchen scale. (? That is exactly the one I own and love!) Too much of either will dry from the cookies and leave them cakey instead of chewy.
Immediate oats are also referred to as quick-cooking or minute oats. They are available in massive canisters, just like conservative oats. They are not the ones at the tiny flavored loaf of bread. To create your own, add the same amount of conservative yogurt into a food processor, and pulse 10-12 times or until the oats will be about 1/4 to ? of their original size.
For the gluten-free flour, I recommend the following mix: 1/2 cup (60g) millet flour, two tablespoons (15g) tapioca flour, two tbsp (15g) brown rice bran, and 1/2 teaspoon xanthan gum. Most store-bought fermented flour blends (like that one!) Will also do the job, if quantified like this.
For the best results, use the ripest and spottiest bananas you'll be able to find!
